지난 2019년, 한산한 안산 단원구 고잔동에 코끝을 자극하는 파스타 향기가 거리에 활기를 불어넣기 시작했다. 한국인의 입맛에 맞춰 재해석된 퓨전 양식 캐주얼 레스토랑 ‘뽁식당’이 등장했기 때문이다.
뽁식당을 운영하고 있는 ‘(주)열정’의 강기복 대표는 뽁식당을 포함해 5개의 F&B 브랜드를 운영하는 떠오르는 요식업 사업가로 최근 인기를 끌고 있는 넷플릭스 시리즈 ‘흑백요리사’에 ‘흑수저 셰프’로 방송에 참여하기도 했다.
2017년 뽁식당 첫 론칭 이후, 대만 중식 레스토랑인 ‘오복당’, 그리고 타코 등 멕시칸 요리를 판매하는 ‘카사데타코’, 계절 분기별에 맞춰 제철 식재료를 이용해 다양한 와인을 함께 즐길 수 있는 다이닝바 ‘소굿’, 테판 요리 전문점 ‘보꾸’를 차례로 론칭해 운영하고 있다.

이처럼 열정은 기존의 낙후된 골목 상권에서 먹자골목을 형성해 상권을 살림과 동시에 브랜드 디자인, 컨설팅, 인테리어, 마케팅 등 외식업을 둘러싼 전과정에서 활약하고 있다. 올해에는 수제버거 전문점인 ‘더 코너 비스트로’, 분식전문점인 ‘강호랭이 분식’과 경주 ‘도화당’의 브랜딩과 컨설팅을 진행하기도 했다.
더불어, 초기 브랜딩과 마케팅을 진행하는 과정들을 유튜브에 업로드하거나 강연 영상을 통해 초보 소상 공인들에게 선한 영향력을 전하고 있다. 지난 11월에는 제 75회 SETEC 프랜차이즈 창업박람회에 뽁식당과 카사데타코 브랜드가 참여해 외식업 초청강연을 진행했다.
여러 요식업 브랜드를 론칭하면서 프랜차이즈 가맹 사업에도 뛰어들었다. 2019년에 뽁식당 고잔본점이 들어선 이후 시흥 배곧점, 인천 트리플점 등 매장을 연이어 오픈해 현재 7개의 직영점과 7개의 가맹점을 확보하고 있다. 특히, 지난 2023년 8월 오픈한 뽁식당 진주 혁신도시점을 기점으로 지방권으로 매장을 확대하고 있다.
이어 멕시칸 요리를 전개하는 카사데타코는 직영점 2개와 현재 오픈이 확정된 충무공동 지점을 포함해 4개의 가맹점을 운영 중이다. 오복당도 안산 고잔동에 위치한 직영점 1개와 가맹점으로 오픈을 진행 중인 초전점을 통해 가맹 사업을 진행하고 있다. 또한, 클로버 성수 팝업과 협업하는 등 다양한 브랜드들과 협업하며 빠른 성장을 보이고 있다. 열정은 계속해서 프랜차이즈 가맹 사업에 집중할 계획이다. 내년에는 각 브랜드의 오프라인 매장을 공격적으로 확대할 전망이다.
강기복 대표는 “오프라인 매장 확대와 더불어 요식업으로 국내를 넘어 해외에 진출하는 것이 최종 목표입니다. 글로벌 시장 진출을 가속화해 전 세계에 저희 ‘열정’만의 가치를 전달하며 국내외에서 경쟁력 있는 브랜드로 인정받는 기업이 되고자 합니다”라고 덧붙였다.
