뉴욕에 미슐랭 3스타 프렌치 레스토랑 퍼세(Per Se)의 안진호 쉐프를 만나보았다. 뉴욕에서 미슐랭 3스타를 받은 레스토랑은 단 5곳뿐이다. 타임워너 빌딩에 위치한 퍼세는 맨하탄 센트럴 파크가 한눈에 들어오는 전경을 배경으로 고풍적인 가구와 인테리어가 돋보이는 프렌치 레스토랑의 느낌이 한 눈에 들어왔다.
이 곳에 유일한 한국 쉐프로 요리학교계 하버드라고 불리우는 CIA를 졸업한 후 퍼세에서만 6년째 근무하고 있는 안진호 쉐프를 만나 그와 퍼세의 매력에 대해 물어봤다.
Q. 퍼세에 대해 소개해 주시겠어요?
퍼세는 2004년도, Chef Thomas Keller가 뉴욕에 오픈한 두번째 플래그십 모던 프렌치 레스토랑입니다. 오픈한지 2년후인 2006년, 미슐랭에서 3스타를 받았고 이로 인해 토마스 켈러는 세계 유일무이 미슐랭 3스타 레스토랑을 두개를 가지고 있는 오너 쉐프가 되었죠. 2006년부터 현재까지 미슐랭 3스타를 쭉 유지해오고 있습니다. 저는 퍼세에서 2013년부터 6년째 근무하고 있습니다.
Q. 굉장히 오래됐네요. 그럼 퍼세가 다른 레스토랑과 다른 점이나 특별함이 있다면 어떤 것이 있을까요?
주기별로 바뀌는 다른 레스토랑과 다르게 매일 바뀌는 ‘Chef tasting menu’와 큰 대형 냉장고인 ‘Walk in’이 없다는 것이죠. 토마스 켈러는 ‘Chef tasting menu’의 아버지라 불리고 있어요. 퍼세의 쉐프들은 매일 밤 다 같이 테이블에 둘러 앉아서 가장 신선한 음식으로 다음 날 메뉴에 대해서 상의하여 새로운 메뉴를 짜는 것으로 하루 일정을 끝내요.
토마스 켈러의 시그니처 디쉬인 ‘Oyster and pearls’를 제외한 모든 ‘tasting menu’는 그렇게 매일 바뀌고 있어요. ‘Walk in’이 없는 이유는 매일매일 신선한 재료가 들어오고 바로 소진되기 때문이죠. 그렇기 때문에 굳이 그렇게 큰 사이즈가 필요 없어요. 냉장고 문을 열면 내부가 한 눈에 들어오는 컴팩트한 사이즈에 빠른 소진을 통해 식자재의 퀄리티를 유지하기 위함이기도 해요.
Q. 쉐프의 꿈을 갖게 된 계기가 있나요?
어릴 때부터 음식에 대한 호기심이 굉장히 많았어요. 탕수육은 어떻게 만들까 소스는 어떻게 만들어 질까 그냥 단순히 음식을 먹을 때마다 그런 궁금증은 늘 가지고 있었죠. 중3때 특별 수업으로 요리부에 들어가려고 했으나 자리가 차서 제과제빵 수업을 들었고 그 때 우리나라에서 제일 큰 빵집을 여는 꿈을 가졌었죠.
그렇게 고등학교 진학을 앞두고 우리나라에 처음으로 한국조리 과학고등학교가 생긴다는 소식을 듣고 진학하려 했는데 부모님의 반대에 부딪혀 일반 인문계 고등학교에 진학했어요. 결국 고등학교에서도 SKY와 서울에 있는 대학 진학을 목표로 하는 다른 친구들과 똑같이 수험생이 됐었죠.
그렇지 않았다면 한국조리과학고 1회 졸업생이 되었을 지 모르죠.(하하) 대학 입학을 앞두고 진로에 대해 고민 끝에 내가 즐거운 일을 직업으로 삼아야겠다는 생각이 들었고 그때까지도 요리에 대한 꿈이 사라지지 않았었어요. 지금 생각하면 무모할지도 모르는 젊은 패기와 포부로 CIA요리 유학을 계획했고 그렇게 쉐프로써의 꿈을 조금씩 키워 나가게 됐습니다.
Q. 특히 프랑스 요리를 선택한 계기가 있나요?
그냥 귀신에 홀린 듯 프렌치 요리에 빠져들었어요. 어릴 때 고급 음식은 프렌치라는 단순 선입견도 한 몫 한듯하지만, 프렌치는 쉐프로써의 기본기를 단단히 갖출 수 있는 분야이고, 알면 알수록 매혹적인 음식들이 많아서 망설임없이 뛰어 들게 되었던 것 같아요.
Q. 쉐프로써 이곳 주방에서 일하면서 가장 어려운 점이 있다면 어떤 게 있을까요?
주방에서 일하는 것은 육체적 정신적 중노동이예요. 항상 날카로운 판단력과 안전, 스피드를 구사해야 하기에 정신적으로도 에너지가 많이 소모되지만, 하루 종일 긴장감 속에 달리며 일하는 것도 엄청난 체력을 필요로 하죠. 직업 특성상, 남들 쉴 때 항상 더 바빠야 하기 때문에 주변을 챙기지 못한다는 것이 가장 아쉬운 점이예요. 하지만 주방은 팀워크가 생명이므로, 나 하나 빠지면 다른 팀원들이 굉장히 힘들어질 수 있어서 지금까지 한번도 빠진 적이 없어요. 요리하는 시간이 가장 행복해 오늘도 출근하는 길이 가슴 떨리는 순간이었어요.
Q. 정말 천성이시네요. 그러면 일하면서 가장 기억에 남는 에피소드를 말씀해 주시겠어요?
일하다가 다른 쉐프에게 칼로 손이 찔린 적이 있었어요. 그 쉐프가 제 칼을 빌려 갔었는데, 점심시간이었던 터라 주방안에서 모두가 굉장히 빠르게 움직이고 있었어요. 그가 몸을 돌린 저를 보지 못하고 제 도마에 칼을 되돌려 놓으려는 순간 제 손바닥을 찌른 거예요.
안전사고가 예민한 주방에서 이 일은 굉장히 큰 실수죠. 하지만 오늘은 무슨 일이 있어도 서로 도와주고 이해해 주리라는 마음을 품으며 너무나 미안해하는 쉐프에게 괜찮다며 안심시켜 줬어요. 그런데 막상 일을 다시 시작하니 그 날 따라 주문량은 왜 이렇게 많은 지 유난히 혹독한 하루였어요. 힘든 순간 아까 칼에 찔렸을 때 그냥 쓰러질 걸 하고 잠시 후회했었죠.(하하)
Q. 퍼세의 특별한 매력은 무엇이라고 생각하시나요?
퍼세에서 일하면서 퍼세의 매력이라면 일단 단연 메뉴를 매일 바꾼 다는 것이죠. 퍼세가 오픈한 이후에 약 2만여개 이상의 요리를 선보였고 저 또한 지난 5년간 만들어본 레시피만 350여 가지 이상이예요. 짧은 시간에 많은 것들을 배울 수 있는 큰 장점도 있지만 그 만큼 매일 새로운 것을 만든다는 것은 정말 쉬운 일은 아니예요. 이곳은 매일매일이 도전이고, 설레이는 순간의 연속이죠.
Q. 쉐프로써 가장 추천하고 싶은 메뉴는 어떤 건가요?
단연 ‘Oyster and pearls’예요. 모든 메뉴는 매일 바뀌지만 이 메뉴는 ‘French Laundry’를 연 지 25년, 퍼세를 오픈한지 15년이 지나도록 바뀌지 않은 쉐프 ‘토마스켈러’의 시그니처 메뉴예요. 캐비어와 타피오카 푸딩 굴을 곁들인 메뉴인데 시그니처인 이유는 먹어보면 압니다.
Q. 마지막으로 쉐프를 꿈꾸는 사람들에게 조언 한마디 해 주시죠.
